Gin Types
London Dry Gin
London Dry Gin (also “London Gin”) is one of the most famous Gin categories, and the most regulated.
London Dry Gin does not have to come from London. But, it is characterized by a minimum alcohol content of 37.5%, the base alcohol must come from agricultural resources, and the botanicals and aromas have to be natural.
All ingredients have to be added at the very beginning of the distillation process and no additional flavours or colours are allowed.
Production
Juniper berries and nine other botanicals are processed using the special "single-batch" method from the 18th century.
The exclusively natural ingredients are distilled according to the original recipe from 1740 in a copper pot still.
These are just two of the regulations that make Finsbury the third oldest London Dry Gin recipe.
The stills are all named after important women in the company.
Jenny is one of the largest stills in Europe with 12,000 liters and named after the daughter of the gentleman who taught master distiller Rob the craft, while Constance with 3,000 liters was named after his mother and Angela, with 1,000 liters after the daughter of the company founder Walter Palmer. Our copper stills at Langley Distillery are among the oldest, still functioning in the UK, some of them date back to the early 19th century.
The botanicals contain essential oils. It is the extraction of these oils by alcohol that gives the gin its unique taste.
Ori — Gin
The Finsbury Distillery was founded in 1740 by Joseph Bishop in London.
After being located on Ropemaker Street/ Finsbury Street for more than 100 years, the Bishop family, in 1904, built their new distillery right in the heart of London, on Moreland Street.
The name Finsbury stands for its deep connection with London. The British capital still has streets, squares, parks and pubs wearing the proud name.
